Bánh phu thê/xu xê

Bánh phu thê (husband and wife cake) or xu xê (mispronounced words) is a Vietnamese traditional sweet dessert used mostly in betrothal ceremonies. It is believed to have been named by King Ly Anh Tong in the 12th century. It’s made from “nếp cái hoa vàng” (yellow flower mother sticky rice) starch through a complicated process and filled with mung beans. Bánh phu thê has different colours as when dyed by different leaves.
