Xôi (sticky rice) is a popular food around Asia, which becomes especially sticky when steamed and provides a greater amount of lipid, compared to normal white rice. Xôi xéo (“xeo sticky rice”) is characterised by a mung bean layer on sticky rice with oil and dried onion spread on top. Although the ingredients are simple, cooking good xeo sticky rice is one of the biggest challenges in all of Vietnamese cuisine.
